Rainy Day Fudge
Recipe1-
1 (6 oz.) pkg. semi-sweet chocolate chips
2/3 c. evaporated milk
1 2/3 c. sugar
1 1/2 c. mini marshmallows
1/2 c. nuts (optional)
Over medium heat dissolve sugar in evaporated milk. Bring to a boil and boil for
5 minutes, stirring constantly.
Remove from heat and stir in chocolate chips and marshmallows until melted. Add
nuts. Pour into buttered pan (8 x 8 x 2-inches). Cool at room temperature. Cut
into squares.
Recipe 2-
4 oz. unsweetened chocolate
6 oz. cream cheese, softened
1 tsp. vanilla
1/8 tsp. salt
1 lb. 10x sugar
1 c. nuts, broken
Mix vanilla, salt and cream cheese. Add 10x sugar in small amounts; mix well.
Add chocolate and nuts; mix well. Line an 8-inch square pan with wax paper.
Press fudge mixture into pan and chill, covered. When thoroughly chilled, slice
and keep covered until eaten.
