Lemon Surprise Pie


3 Tbsp. soft butter
1 c. sugar
2 eggs, separated
1/4 c. lemon juice
1 tsp. grated lemon rind
3 Tbsp. flour
1/8 tsp. salt
1 c. milk
1 (8-inch) unbaked pie shell
Topping

Cream butter; gradually add sugar and blend well. Add egg yolks one at a time, beating well after each addition. Add lemon rind, juice, flour and salt; mix well. Stir in milk.
Beat egg whites until stiff but not dry; fold into lemon mixture. Pour into unbaked pie shell. Bake at 450 degrees for 10 minutes; reduce heat to 350 degrees and bake for 35 minutes or until knife inserted in center comes out clean. Remove from oven and spread topping over top of pie. Return pie to oven and bake 10 minutes longer.

Lemon Surprise Pie Topping:
1/2 (8 oz.) pt. sour cream
3 Tbsp. sugar
1 tsp. vanilla
Mix all ingredients together well. Use as directed in Lemon Surprise Pie.
