Bread Pudding

Recipe 1-
Soak the bread in cold water for several hours - you may take crusts off if you wish but she never did. Then squeeze out the water and put the bread in a bowl with some brown sugar, two teaspoons of baking powder, a teaspoon of mixed spice and a beaten egg. add dried fruit i.e. currants, sultanas or raisins - a couple of oz. The amount of brown sugar depends on how sweet you want it - I usually put a couple of tablespoons. Mix together and place in a greased baking dish. Place in a moderate oven (Gas mark 5 ish) for 30 to 40 minutes or until nice and brown. It is delicious with custard or with ice cream. The left overs are also lovely when sliced cold with a cup of tea.
Recipe 2-
8 slices bread (cut in strips or cubes) 4 eggs 1 cup sugar 1 teaspoon cinnamon 1/2 teaspoon salt 2 teaspoons vanilla 2 tablespoons margarine or butter (optional) 1 16 ounce can or jar of applesauce (2 cups homemade) 3 cups milk Cube bread and place in a 9 x 13" pan (add more bread if you need in order to fill up the pan). Combine eggs, sugar, cinnamon, salt, vanilla, margarine, applesauce and milk. Pour over cubed bread. Press the bread down gently to make sure that all the cubes are soaked. Bake at 325° for one hour. Serve plain or with sauce of your choice.
