Caramel Crunch Apple Pie


Pastry for a 1-crust pie (9" pan)
24 caramels (unwrapped)
3 T. cold water
4 C. peeled & sliced apples
¾ C. flour
1/3 C. sugar (or more)
½ t. cinnamon
1/3 C. margarine or butter
½ C. chopped walnuts

Preheat oven to 375º. Roll pastry to a 12" circle; fit into a 9" pie plate. Flute edges. In a microwave safe bowl, melt caramels with water in microwave until melted (about 1-2 minutes) - be careful not to overcook, stir & check often. Spoon sliced apples into uncooked pie shell. Drizzle with melted caramel. Mix flour, sugar & cinnamon. Cut butter into this until mixture resembles coarse crumbs. Stir in walnuts; sprinkle over apples. Bake for 40-45 minutes, until apples are tender. Yield: 8 servings.
