Caramel Corn


Pop 1 C. of popcorn- you should have about 8 qt. of popped corn.

Put into a large roasting pan.

Mix 2 C. brown sugar, 1/2 C light corn syrup, 2 sticks (1/2 C.) margarine & 1 t. salt in a large saucepan. Heat to boiling, and boil for 5 minutes, stirring constantly. Take off of heat & stir in 1 t. vanilla &1/2 t. baking soda, mix well. Pour over popped corn in roaster & toss to mix well. Place roaster into a 250° oven & cook for 1 hour, stirring every 15 minutes. Remove & let cool. Store tightly covered.
