Impossible Cheesecake


3/4 c. milk
2 tsp. vanilla
2 eggs
1 c. sugar
1/2 c. Bisquick baking mix
2 pkg. (8 oz. each) cream cheese, softened and cut into 1/2-inch cubes
Cheesecake Topping (recipe follows)

Grease 9 x 1 1/4-inch pie plate. Place milk, vanilla, eggs, sugar and baking mix in blender. Cover and blend on high 15 seconds. Add cream cheese. Cover and blend on high 2 minutes. Pour into plate. Bake until center is firm, 40 to 45 minutes at 350 degrees. Cool. Spread with Cheesecake Topping.

Cheesecake Topping:
1 c. dairy sour cream
2 Tbsp. sugar
2 tsp. vanilla
Mix well and place on cooled, baked cheesecake. Refrigerate several hours.
