Chocolate Tassies
Tassies are old-fashioned cookies that resemble mini pecan tarts. Here,
the pecan filling is chocolate!
Pastry:
2 C. all purpose flour
2 (3oz.) packages cream cheese, cold, cut into chunks
1 C. butter or margarine, cold, cut into chunks
Filling:
2 T. butter or margarine...................................2 t. vanilla
2 (1oz.ea.) squares unsweetened chocolate.....2 eggs, beaten
1-1/2 C. packed brown sugar............................dash salt
1-1/2 C. chopped pecans
To prepare pastry:
Place flour in large bowl. Cut in cream cheese & butter. Continue to mix until dough can be shaped into a ball. Wrap dough in plastic wrap, refrigerate 1 hour. Shape dough into 1" balls. Press each ball into ungreased miniature (1-3/4") muffin pan cup, covering bottom & side of cup with dough. Preheat oven to 350°
To prepare filling:
Melt butter & chocolate in medium-sized heavy saucepan over low heat. remove from heat; blend in sugar, eggs, vanilla & salt, beat till thick. Stir in pecans. Spoon about 1 teaspoon filling into each unbaked pastry shell. Bake 20 to 25 minutes, or until lightly browned & filling is set. Cool in pans on wire racks. remove from pans; store in airtight containers. Yield: about 5 dozen cookies.
