Midnight Chocolate Pudding
Is there anything better than cooked pudding?
1/3 C. unsweetened cocoa
1/2 C. sugar
3 T. cornstarch
2 C. low-fat milk
1 t. vanilla
In a medium saucepan stir the first 3 ingredients together till blended. Gradually stir in the milk. Cook over medium heat; stirring constantly, until the mixture boils and is thick & smooth. Cool 5 minutes; stir in vanilla. Pour into small pudding or custard cups. Serve warm or at room temperature.
