Chocolate Coconut Candies


3/4 C. mashed potatoes (cooled).....4 C. flaked coconut

1 lb. powdered sugar......................1 t. almond extract

Chocolate Coating (recipe follows)

Mix all ingredients except Chocolate Coating. Drop mixture by heaping teaspoons on to waxed paper. Roll into balls; chill 1/2 to 1 hour or until firm. If mixture is too soft to form balls, chill before shaping.

Prepare Chocolate Coating. Using tongs or forks, dip balls into coating, turning to coat evenly. (Keep coating over hot water while dipping balls.) Remove balls from coating & place on waxed paper lined baking sheet. Chill until firm. Yield: about 5 dozen candies.

Chocolate Coating

2 T. soft butter or margarine.........3 T. water

2 T. corn syrup............................1 package chocolate fudge frosting mix

In top of double boiler, mix butter, corn syrup & water. Stir in dry frosting mix until smooth. Heat over rapidly boiling water 5 minutes, stirring occasionally.

(Tracy's note: If you cannot find the chocolate frosting mix, coat the centers with melted Candy Melts or melted chocolate.)
