Diabetic Icing Recipes
The following are recipes that I was given a while back. I have not made them myself, but have a friend that has. She told me that the frosting does work well for icing a cake, but will not hold up to 'decorating'. It may do simple borders, and you can write with it- but you won't get roses to work, for example. I would be VERY interested to hear about your experience with them...

Cups nonfat dry milk powder
2 Cups cornstarch
1 cup granulated sugar
replacement
Place all ingredients in a food processor or blender. Whip until well blended & powdered. Use in following recipe:
¼ Cup solid vegetable
shortening
½ teaspoon clear vanilla
extract
¾ Cup powdered sugar
replacement (above)
1 Tablespoon milk
Cream
together shortening & vanilla till light & fluffy. Stir in powdered
sugar replacement & milk till mixture is well blended. If frosting is too
stiff, add a few drops of milk. Tint as desired. Makes ½ cup.
Diabetic
icing (to frost cake)

envelope D-Zerta Whipped Topping Mix
½ Cup cold water
½ teaspoon clear vanilla
extract
4 teaspoons meringue powder
Combine in deep bowl & whip with electric mixer 4 minutes, or until fluffy. Makes 2 cups & is used to ice a cake.
