3-D Dragon/Dinosaur Cake Instructions

(Believed to be originally by Cheri Elder, and demonstrated at an ICES convention. This is an adaptation of her demo.)

Ingredients:

2- 8" cake layers (can be done larger or smaller, as desired)
Buttercream icing
2 Ding-Dongs
14x20" Cake board

Procedure:
(attach all cake pieces to the board with icing)

1> Cut layers as shown in yellow diagram below numbered instructions.
2> Secure the two 1/2 cakes together, flat sides lined up, one atop the other with buttercream. Stand in the center of the board, on the flat cut sides (this is the body). If you want a fatter, rounder body- use a 6" layer, cut it in half the same way as the 8" one, and place one half against each side of the body, attached with icing. Or- a slightly short Wonder Mold cake will make a decent body, too.

3> Arrange the neck & tail pieces as desired- tail can curve the same way as the neck, or the opposite way. bevel the top edges of each, to round slightly. In the below picture, I also placed a triangular-shaped piece against the body to elevate the neck (in green square) and cut the pointed end off of the neck piece to shorten it.

4> Stack the 2 Ding Dongs with icing between, and place against the end of the neck piece (this is his head) {I used 2 cupcakes, they are in the purple squares below}
5> Stack the 2 triangular head pieces together with icing between, and place against the end of the head with the point facing out (this is his snout) {I used the piece I had cut off the neck, see the blue square below. The piece of cake in the plastic wrap is what was left of the second 8" round layer}.

6> Now, ice the whole thing in shades of green, or whatever color you desire. You could also ice it in white, and airbrush if you like. Don't worry about getting it smooth, the rougher the better! You will need to use extra icing to make a smooth transition between the body & neck and tail pieces, and perhaps between the head & snout. Just keep a dinosaur/dragon body shape in mind as you're icing, and do whatever seems right.

7> Using only a coupler on your bag, pipe on the legs, toes, eye ridges, nostrils, back spikes- whatever rough details you think he needs.

8> You can either pipe his eyes, or use the plastic googly ones. Give him eyelashes, if you want, and toenails. Maybe teeth, and/or a red tongue (for a dragon)

I used my thumb to give him indents in his nostrils, and a cut parchment bag for his toenails & teeth. I also used green candy melts to make the back spiked plates, along with piping some pulled out spikes in between them with a large tip, like a #12-

My dinosaur ended up kinda wide & low, so I think I would leave off the 2 extra smaller cake halves next time. The customer estimated that the cake gave her 20-24 servings, FYI.
