Alaskan (Clover) Honey

10 c. sugar
1 tsp. alum
2 1/2 c. water
48 clover blossoms (30 white and 18 red)
18 fire weed blossoms

Boil sugar, alum and water for 8 minutes. Remove from heat and add blossoms. (It is helpful to first enclose the blossoms in nylon netting!) Let blossoms steep for 1 to 2 hours, then remove. Makes 2 1/2 quarts. Longer boiling makes a thicker honey.
