Gingerbread Loaf


4 C. flour........................1 t. baking soda

2 C. sugar.......................1 t. ground ginger

4 t. baking powder..........2 eggs

2 t. ground cinnamon.......2 C. milk

1-1/4 t. ground cloves.....1 C. maple syrup

1-14/ t. ground nutmeg....2 T. vegetable oil

In  a large bowl, combine dry ingredients. In another bowl, combine the eggs, milk, syrup & oil. Stir into the dry ingredients just until moistened (batter will be thin). Pour into two greased 9x5x3" loaf pans. Bake at 325° for 60-70 minutes, or until a pick inserted near center comes out clean. Cool in pans on wire racks for 10 minutes before removing to racks to cool completely. Yield: 2 loaves
