Mom's "Busy Day Pie" 


1 c. flour
1 Tbsp. sugar
1/8 tsp. salt
1/4 c. butter
1 egg yolk, slightly beaten
1 tsp. baking soda
apples or peaches, sliced

Combine flour, salt and sugar. Cut in butter with 2 knives. Add egg yolk and mix. Press into a pie plate to 1/4-inch thickness. Fill with apples or peaches. Top with cinnamon and sugar. Bake at 425 degrees for 10 minutes. Reduce temperature to 350 degrees and bake 30 to 40 minutes until fruit is done.
