Mom's Lasagna


(No Precooking Noodles)

1 1/2 lb. ground beef
1 (12 oz.) can whole tomatoes
1 (8 oz.) can tomato sauce
2 (12 oz.) cans tomato juice or V-8 (or use 1 qt.)
2 envelopes spaghetti sauce mix
1 lb. box lasagna
12 oz. cottage cheese (Mom uses 24 oz.)
8 oz. shredded Mozzarella (12 to 16 oz.)
1/4 c. grated Parmesan (topping only)
chopped parsley (optional)

Cook ground meat, drain. Stir in juice, sauce, tomatoes and sauce mix. Simmer 10 minutes. Use 9 x 13 x 2-inch or larger pan. Put in sauce, then noodles, then 2 cheeses; repeat, ending with sauce. Cover tightly with heavy-duty foil, cook 1 hour at 350 degrees. Let stand, covered 15 minutes. Sprinkle with Parmesan and parsley.
