Mom's Rhubarb-Nut Bread


1 1/2 c. brown sugar
2/3 c. cooking oil
1 egg
1 c. sour milk
1 tsp. vanilla
1 tsp. baking soda
2 1/2 c. flour
1 1/2 c. fresh rhubarb, diced
1 tsp. salt
1/2 c. chopped nuts

Beat oil and brown sugar; add eggs. Mix well. Add milk and vanilla. Sift flour, salt and soda together. Add rhubarb and nuts and stir into first mixture. Pour into 2 well-greased
loaf pans. Fill about 2/3 full. Sprinkle a mixture of 1/2 cup of sugar and 1 tablespoons of butter. Bake at 325 degrees for about 1 hour. Don't overbake.
