Pumpkin Cheesecake Delight


1 can pumpkin
8 oz. cream cheese
1/2 c. sugar
2 eggs
1 tsp. vanilla
1 roll refrigerated cookies (slice and bake type)
whipped topping

In a large bowl, prepare the pumpkin as you would for a pumpkin pie (you can follow the recipe on the can). Line a large 13 x 9-inch cake pan with the sliced cookies and press to form a cookie crust. Pour the pumpkin pie mixture over the top. In a bowl, mix the cream cheese, sugar, eggs and vanilla and beat well. Pour the cheese mixture over the pumpkin mixture. Bake for 1 hour at 350 degrees in an ungreased pan. Chill and serve with whipped topping.
