Magic Chocolate-Almond Brownies


1/2 C. whole natural almonds, chopped
20 crème-filled chocolate sandwich cookies (like Oreo), finely ground
1 package (11.5 oz) bittersweet chocolate chips, melted
1 can (14 oz.) sweetened condensed milk
3/4 t. almond extract
1 can vanilla frosting
maraschino cherries (optional)

Line an 8" square baking pan with enough foil to overhang sides by 2". Heat nonstick skillet over medium heat. Add almonds; cook, stirring until lightly browned & fragrant (3-4 minutes). Remove from skillet & reserve.

In a bowl, combine crumbs, chocolate chips, milk, extract & toasted almonds. Press into pan; let stand at room temperature until firm, at least 1 hour. Use foil to lift brownies from pan. Spread with frosting, garnish each brownie with a cherry, if desired. Yield: 16 brownies.
