Mocha Brownies
4 squares (1 oz. each) unsweetened baking chocolate
1-1/2 sticks (3/4 C.) butter or margarine
2 C. sugar
4 eggs
1 t. vanilla
1 C. flour
1/2 C. flavored instant coffee mix
1 C. coarsely chopped nuts (optional)
Mocha Buttercream Frosting (recipe follows)
Line a 13x9x2" baking pan with foil; grease foil.
In a large microwaveable bowl, heat chocolate & butter on high 2 minutes, in 30 second intervals, or until butter is melted- Then stir until chocolate is completely melted.
Stir sugar into chocolate mixture until well-blended. Stir in eggs & vanilla. Stir in flour, coffee mix & nuts until well-blended. Spread in prepared pan.
Bake at 350° for 30-35 minutes, until pick near center comes out with fudgy crumbs (do NOT overbake). Cool in pan on wire rack. Spread with Mocha Buttercream Frosting.
Frosting:
1/4 C. flavored instant coffee mix
3 T. hot milk
1 stick (1/2 C.) butter or margarine, softened
1 lb. powdered sugar
In a small bowl, dissolve instant coffee in hot milk. In a large bowl, with mixer at low speed, beat butter, sugar & coffee mixture until well-blended & smooth. Let stand, if necessary, until frosting is of spreading consistency.
