Summer Garden Soup


8 c. water
1 Tbsp. salt
1 1/2 lb. zucchini or summer squash, sliced 1/2-inch thick
1 lb. green beans, cut in 1-inch pieces
1 (15 oz.) can navy or fava beans
1 c. small elbow macaroni

Bring water to boil. Add all ingredients except macaroni. Simmer 10 minutes. Add macaroni, return to boil, simmer another 12 minutes (I sometimes give the green beans an extra 5 minutes before adding other ingredients so they won't be so crisp). Serve with Summer Piston.

Summer Piston:
1 1/2 tsp. garlic, finely chopped
1 tsp. coarse salt
1/2 c. fresh basil leaves, chopped
2 Tbsp. oil
4 tomatoes, peeled and coarsely chopped
Crush garlic and salt together with flat of knife until it makes a paste. Combine with other Summer Piston ingredients and mash to make a puree. Chill. Spoon over hot soup. This sounds weird but it's very good!
