Thanksgiving Sweet Potatoes


approximately 2 lb. Sweet potatoes, cooked
1 stick margarine
2 eggs, slightly beaten
1 c. evaporated milk
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
1/2 c. chopped pecans
3/4 c. miniature marshmallows

Topping:
1 stick melted margarine
1/2 c. brown sugar
1/2 c. chopped pecans
3/4 c. Grape-Nuts
1/2 c. miniature marshmallows

Beat sweet potatoes with margarine, eggs and evaporated milk. Blend in remaining ingredients and pour into a greased casserole dish (about 10-inches). Bake 25 to 30 minutes at 350 degrees; or 6 minutes on high in microwave.
Topping: Mix margarine with brown sugar. Spread over sweet potatoes. Sprinkle with pecans, Grape-Nuts and miniature marshmallows. Return to oven for 15 more minutes.
