Orange Bread Pudding


3 eggs, beaten
1-1/3 C. sugar
1/4 tsp. salt
1-1/2 C. orange juice
4 C. day old bread cubes
1/4 C. each flaked coconut and seedless raisins
Hot Orange Sauce

Mix eggs, sugar, salt and orange juice; pour over bread cubes. Add coconut and raisins and pour into 1-1/2 quart casserole. Bake in a moderate 350 degrees oven for 30 minutes or until set. Increase heat to 450 degrees about 10 minutes to brown peaks. Serve warm with sauce. Makes 6 servings.

Hot Orange Sauce:
1/2 C. sugar
1 Tbsp. cornstarch
dash of salt
1 C. orange juice
1 tsp. grated orange rind
In saucepan, mix sugar, cornstarch and salt. Add orange juice and orange rind. Bring to boil and cook, stirring until smooth and thickened. Stir in 2 tablespoons butter.
