Lime Bread


3 C. all-purpose flour
3/4 C. sugar
3 tsp. baking powder
1 tsp. salt
1/4 tsp. baking soda
1-1/2 C. milk
1 beaten egg
1/4 C. cooking oil
1/4 C. lime juice
2 tsp. grated lime peel
2 Tbsp. sugar
1 Tbsp. lime juice

In mixing bowl, stir together flour, sugar, baking powder, salt and baking soda. Separately, combine milk, egg, oil, lime peel and 1/4 cup lime juice & add to dry ingredients all at once; Stir just until moistened. Turn into a greased 9 x 5 x 3-inch loaf pan. Bake in 350 degrees oven 1 hour. Cool in pan 10 minutes. Remove from pan onto rack. Combine the 2 tablespoons sugar and the 1 tablespoon lime juice. Spoon over top of loaf. Cool completely. Wrap well and store overnight. Makes 1 loaf.
