Key Lime Cake
1-1/3 C. sugar
2 c. flour
1/3 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 (3 oz.) lime gelatin
5 eggs
1-1/3 C. cooking oil
3/4 C. orange juice
1/2 tsp. vanilla
1 tsp. lemon extract
1/3 C. Key lime juice
1/3 C. powdered sugar
whipped cream (garnish)
lime slices (garnish)
Preheat oven to 350 degrees. Whisk dry ingredients together in a large mixing
bowl. Beat together eggs, oil, orange juice, vanilla and lemon extract; stir
into dry mixture. Beat until well blended. Pour batter into a 9 x 13 x 2-inch
pan and bake 25 to 30 minutes. Remove cake from oven. Let stand in pan 15
minutes or until almost cool. Prick cake all over with fork. Drizzle thoroughly
with lime juice mixed with powdered sugar. Cover and refrigerate. To serve, cut
into squares and top with whipped cream and lime slices.
