Frozen Lime Pie
1/2 C. lime juice
1 (14 oz.) can sweetened condensed milk
1/4 tsp. grated lime peel
1 C. heavy cream, whipped
1 baked 9-inch pie shell or graham cracker crust
lime twist or strawberries
Stir lime juice into sweetened condensed milk. The milk will thicken to a creamy
consistency due to the acid in the lime juice. Fold in the lime peel, then the
whipped cream. Spoon into pie shell; freeze until almost firm. Wrap in foil and
store until ready to serve.
To serve: Thaw about 15 minutes at room temperature. Garnish with lime twists or strawberries and more whipped cream. Makes 1 (9-inch) pie.
