Orange Slice Cake
1 C. butter
2 C. sugar
2 tsp. grated orange rind
4 eggs
1 tsp. soda
1/2 C. buttermilk
3-1/2 C. sifted flour
2 C. chopped nuts
1 lb. candy orange slices, chopped
1/2 lb. chopped dates
1 C. flaked coconut
1 C. orange juice
2 C. powdered sugar
2 tsp. grated orange rind
Cream butter and sugar in bowl and add orange rind. Add eggs, one at a time,
beating well after each addition. Dissolve soda in buttermilk and add to creamed
mixture, alternating with flour. Add nuts, orange slices, dates and coconut and
mix well. Pour into a greased and floured tube pan. Bake at
300 degrees for 1-1/2 hours or until tests done. Glaze, in pan, while hot
Glaze: Combine orange juice, powdered sugar and orange rind. Mix well and pour
over hot cake. Cool cake in pan.
